Tonight! For your dining pleasure, dear insert family member’s name here , I will be serving a one-of-a-kind cassoulet . Its contents?
Heck if I know.
No, I do know. The contents are from the pantry of “What do we have here?” and the larder of “What is its expiration date?”
I returned from a visit to my sister last Thursday. It usually takes my body and brain about a week to connect. Consequently, options were few when it came to tonight’s supper.
I found some cooked brown rice in the refrigerator. It smelled fairly normal. There was also a jar of spaghetti sauce, almost a half jar. I had trouble opening it, but there was no green or black in the sauce.
Then the carton of cottage cheese sneaked out from the back. Its expiration date was November 3rd , but it didn't have that sour nasty odor, and it was still white.
Scrounging a bit more in the dry pantry, I discovered a can of albacore tuna and some sliced green beans, along with diced tomatoes. This had a date on it, but it was smeared but the expiration numbers looked okay
Tah-dah! Drain the tomatoes, tuna, and green beans. Mix it all together. Add some Parmesan cheese, lots of it. Bake until bubbling. Stir it up really well. Top with non-moldy cheese. Let brown a bit.
Serve with a flourish and great style. They will never know.
Voila! =(Vwah-lah)
This is a post from November 2011. It is true.
If you could head over to my site In Preacher's Creek, that would be great. One of my real life kid memories can be read there! Thanks! In Preacher's Creek

HAHAHAHA Sounds good to me. Thanks for smiles to start the day after the mess I was served on the internet last night from DC.
ReplyDeleteLove you lady,
Good stuff
Sherry & jack
So true. I do not know what happens next.
DeleteI'm sorry but that sounds awful. Was it good to you all? Hmmm...but I needed the diversion from living in the district right now. Even tuna and tomatoes is better than being here....well almost, let's not get crazy.
ReplyDeleteKeep it a chance? Making spaghetti sauce and add Tuna?
DeleteI did something like that yesterday for dinner. I had Italian sausage, frozen pepper strips from last summers garden, rice and all kinds of cheese (nothing past date). I put these ingredients into the Internet and asked for recipes and I got 27. The one I picked turned out great although I added a few other ingredients. Tonight we have left overs. The Internet has some good uses.
ReplyDeleteGetting recipes is reviving my view of cooking.
DeleteSimilar dishes are served here often. And no one has died (yet) and they continue to front up to my table.
ReplyDeleteSame here.
DeleteIt may be an old post but it sounds a lot like Covid cooking -- making do with what we have till groceries come again!
ReplyDeleteThat's the way my ancestors lived, making do.
DeleteYou can't hurt a casserole no matter what the ingredients are. As long as they aren't spoiled of course.
ReplyDeleteI was fortunate there. This could have gone really badly.
DeleteThat's hysterical! I suppose enough cheese can make anything palatable.
ReplyDeleteCream Cheese would cover a lot of sins.
DeleteExpiration dates are suggestions. If the food still looks good, it's fine.
ReplyDeleteOn the other hand, it the can looks all bulging, then throw it outside like a grenada.
DeleteI loved this! Many times I've searched the larder for a meal! Now I usually make a menu so my shopping is done and I usually don't have to make another trip for a bit. One of my hubby's favorite meals is tuna casserole. I'm thinking he would like this one!
ReplyDeleteGo for it!
DeleteCanned beans and cottage cheese? I'll pass, thanks anyway.
ReplyDeleteWell, it was a stretch.
DeleteI cook a lot. I am also big on mixing leftover things to create dishes. I think that the ability to do such things is a real cooking skill.
ReplyDeleteYour casserole sounds good.
I was surprised that it was good. I won't make again though.
DeleteI decided when I began lockdown, I would eat all the food that was in my pantry. Seems like something I might have fixed, but I'd never add the albacore tuna to the rest of the ingredients. Still, it sounds MOSTLY good enough to eat.
ReplyDeleteMy family hated when I put peas in the tuna pasta casserole.
DeleteMy dear mum used to prepare meals like this, she called them 'Wait and See Pie' or 'Wait and see casserole'
ReplyDeleteThey were always tasty :)
All the best Jan
My mom was much the same. She was an awesome cook.
DeleteDid anyone die? Only kidding. Sometimes these dishes become classics! Personally, I would have left the tuna out, but that's me. Alana ramblinwitham.blogspot.com
ReplyDeleteNo, it did get eaten, just not by me. Hehe.
DeleteThat's how i came up with "desperation dinner," and it was such a hit it became a staple!
ReplyDeleteWe should put together a blogger cookbook.
DeleteThat's just wrong....
