So, my husband wants to help me in the kitchen so I would come and sit down to watch reruns. So, I asked him to make cracker crumbs by using a rolling pin to crush crackers in a large zip plastic bag.
If he doesn't know me by now, he learned nothing over 5 decades we have been married.
So,I explained the process and he began. He muttered at first that these crumbs were just fine. Fine for chili, I told him. With each roll, he growled that he thought this was fine. After about 5 minutes of grumbling, I pronounced the crumbs acceptable.
He cheerfully said that I should join him watching some business news program on TV.
Making a double batch of meatloaves requires more than cracker crumbs. He grumbled more.
So, after putting on disposable gloves, I kneaded and mixed the minced beef with mild Italian sausage. It took all of 15 minutes, since I am one who sets out the ingredients first and then fix whatever.
Recipe:
Easiest and best meatloaf from All-recipes
· 1 ½ pounds ground beef w/Italian sausage
· 1 egg
· 1 onion, chopped
· 1 cup milk
· 1 cup dried bread crumbs
· salt and pepper to taste
· ⅓ cup ketchup
· 2 tablespoons brown sugar
· 2 tablespoons prepared mustard
Directions
1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
2. Combine ground beef, onion, milk, bread crumbs and egg in a large bowl; season with salt and pepper. Transfer into prepared loaf pan.
3. Mix ketchup, brown sugar, and mustard together in a small bowl until well combined; pour over meatloaf and spread it evenly over the top.
4. Bake in the preheated oven until no longer pink in the center, about 1 hour.
We have gotten so lazy in fixing meals here. There are some neurological issues (migraines and such) that send me to the couch in a dark room too often. This recipe was easy, after debating how to make it with my beloved.
So, wait until I set out potatoes to peel for mash. Any bets on what he will say?

One of my meals when stationed in GITMO was Meatloaf. I can't even remember the recipe. But Sherry & I shared evening meals, I just remember that was one. I used to spell our name on the top in ketchup before baking. LOL

Anyway, I still love meatloaf, it has been a very lobng time since we prepared it though.

Deleteno milk in my mothers, she used bread crumbs, i use saltines. we wet the saltines or bread crums and squeeze water out. the rest of it is the same. she baked hers I do mine in microwave, bob likes it best. i don't like meatloaf but eat a small piece. i do as little cooking as quickly as I can, hated it when i learned as a child, when i got married when i hd children, got divorced, did not cook for 3 years, got married to bob and now here i am stuck cooking til the day i die

DeleteI make meat loaf for himself from time to time. I have never used milk though - and I don't peel the potatoes. Extra fibre I tell him.

DeleteI just made a turkey meatloaf this week. My stomach isn't fond of beef, so I tend to do most things with ground turkey if I can. I hope you enjoyed your meatloaf.

DeleteYour meatloaf looks delicious. Now that I'm older and I only have my son and me to cook for I usually make meals that are enough to have leftovers or freeze-until-later. It makes my life a lot easier and we still have good home-cooked meals.
ReplyDeleteI made enough to share with my daughter's family. It was the best I have ever made. A friend said that using crushed corn flakes instead of crackers was a good substitute.
DeleteI've tried lots of meatloaf recipes and this sounds excellent. My Sweetie likes "stuffed meatloaf," you make it just like usual meatloaf and this recipe would work, just put half in the loaf pan, cover with sauteed onions and cheese, then seal that in with the rest of the meatloaf and bake as usual.

DeleteI use a mix of ground beef and sausage meat for my meatloaf, no milk, but garlic and pepper, and seasoned stuffing mix instead of breadcrumbs. The sausage meat makes a slightly more dense loaf, better for slicing for sandwiches the next couple of days. I have never done the tomato sauce topping but might try that next time.

DeleteI read all the comments and enjoyed all the different ways meatloaf was made! I make mine with beef and Italian sausage mix, ketchup, onions...sometimes I use the dry onion mix, chopped green peppers, salt, pepper, oatmeal instead of cracker or bread crumbs, egg, and then ketchup glaze on top. I do like to try different recipes and once I made Pioneer Women's version where she wraps it in bacon. Yuk. That got a "Better next time" review! Ha! I remember an old Ann Landers advice about a happy marriage that said something like "Don't let your meat loaf"...Ha again!
