ever eats this, I will be serving a one-of-a-kind cassoulet . Its contents?
Heck if I know.
No, I do know. The contents are from the pantry of “What do we have here?” and the larder of “What is its expiration date?”
I returned from a visit to my sister in Ohio last Thursday. It usually takes my body and brain about a week to connect. Consequently, options were few when it came to tonight’s supper.
I found some cooked brown rice in the refrigerator. It smelled fairly normal. There was also a jar of spaghetti sauce, almost a half jar. I had trouble opening it, but there was no green or black in the sauce.
Then the carton of cottage cheese sneaked out from the back. Its expiration date was November 3rd , but it didn't have that sour nasty odor, and it was still white.
Scrounging
a bit more in the dry pantry, I discovered a can of albacore tuna and
some sliced green beans, along with diced tomatoes. This had a date on
it, but it was smeared but the expiration numbers looked okay
Tah-dah! Drain the tomatoes, tuna, and green beans. Mix it all together. Add some Parmesan cheese, lots of it. Bake until bubbling. Stir it up really well. Top with non-moldy cheese. Let brown a bit.
Serve with a flourish and great style. They will never know. Even if they do know, that means a bit of dessert, say, jello and carrots.
Voila! =(Vwah-lah)
This is a post from November 2011. It is true. I bet there is someone out there who is nodding silently.
We have been sick with COVID for the better of 2 weeks. I wish I could say we are just fine, but it is a long haul. Now, if some elf or magic person come appear and then voile ah-lah. , oh that would be marvelous.

I am so sorry you have Covid - and hope you improve quickly.
ReplyDeleteWe are kinda better. Thanks for your struggles.
DeleteI assume you're vaxed and boosted.
ReplyDeleteOh, yeah. We are so obedient.
DeleteI'm so sorry. I hope you feel better soon.
ReplyDeleteRight now we are pathetic. We will have a big festival of washing dirty dishes tonight.
DeleteHope y'all B much better, now and later. The meal sounds like something I would do. NICE.
ReplyDeleteLove from here.... Be safer!
I have made too many meals of the "toss and ketchup."
DeleteJello and carrots? Together? That dinner doesn't sound like anything I'd put together. I usually have individual sized portions of meals in the freezer where all I need to do is thaw and heat, then add something like rice or dried pasta. Other than that, the old standby, scrambled eggs with grated cheese.
ReplyDeleteDidn't you ever have a lime jello/shredded carrots/ and what ever crunching veg? It looked great.
DeleteNo, that isn't a thing out here. If anything was added to jello it was fruit, but not many people did that. Jello, which we call jelly, was usually served with ice cream. It's a dessert here.
DeleteI'm sorry to hear about your illness... are you sure it wasn't that dish? lol
ReplyDeleteNo, pretty sure I am part of the great unwashed at this point.
DeleteI love leftovers. Somehow they taste better than when they were first served. Please feel better soon.
ReplyDeleteThanks. My mom was the queen of leftovers.
DeleteCovid is a nasty beast, i hope you recover quickly.
ReplyDeleteYes, i've done the "desperation dinner" boogie before.
I am hoping other chefs will confess about this secret receipt.
DeleteThat dang Covid. It's going to get us all eventually...the vaxxed or unvaxxed. Hang in there and I hope you're feeling better soon. My hubby likes leftovers for his lunch. I'm not super big on them unless it's chicken or steak! You have a sister in Ohio? Maybe she's my neighbor? Usually when we leave home I empty the fridge and then it's carry out until the grocery store. Now get better soon!
ReplyDeleteMy sister lives in Columbus, and some day we could connect. Have you gone to a Museum there?
